Spring Pea & Feta Couscous Salad with Basil Vinaigrette

Spring is the perfect time to embrace fresh, vibrant flavors, and this Spring Pea & Feta Couscous Salad is as refreshing as the season itself! With sweet peas, creamy feta, crunchy walnuts, and a zesty basil vinaigrette, this dish is light, nutritious, and full of springtime energy.

Peas aren’t just a delicious pop of sweetness in this salad—they’re also packed with plant-based protein, fiber, and vitamin C, making them a powerhouse for spring wellness!

Ingredients

For the Couscous Salad:

  • ½ cup uncooked couscous (not pearl couscous)
  • ½ cup water or broth
  • 16 ounces (about 3 cups) frozen peas
  • ½ cup chopped parsley
  • ½ cup crumbled feta cheese
  • ½ cup chopped walnuts or pecans


For the Basil Vinaigrette:

  • 1 cup packed basil leaves
  • ½ cup olive oil
  • 1 shallot, cut in half
  • 2 teaspoons minced garlic
  • 1 tablespoon honey
  • 3 tablespoons white wine vinegar
  • 1 pinch red pepper flakes
  • Salt and pepper, to taste

Instructions

  1. Prepare the Couscous:
  • In a small pot, bring ½ cup water or broth to a boil.
  • Stir in the couscous, cover, and remove from heat. Let sit for 5 minutes, then fluff with a fork.
  1. Cook the Peas:
  • In a bowl, add the frozen peas and cover with warm water for 2-3 minutes to thaw. Drain and set aside.
  1. Make the Basil Vinaigrette:
  • In a blender or food processor, combine basil, olive oil, shallot, garlic, honey, vinegar, red pepper flakes, salt, and pepper. Blend until smooth.
  1. Assemble the Salad:
  • In a large bowl, combine couscous, peas, parsley, feta, and walnuts.
  • Drizzle with the basil vinaigrette and toss gently to coat.
  1. Serve & Enjoy!
  • Serve chilled or at room temperature. This salad pairs beautifully with grilled chicken, fish, or as a fresh Easter side dish!
