It’s Open Enrollment Season!

Open Enrollment for 2026 Health Insurance runs from November 1 through January 15. This is the annual opportunity for individuals and families to enroll in, renew, or change their Marketplace (ACA) health insurance plan for the upcoming year.

  • Switch between Medicare Advantage and Original Medicare
  • Review or change their Part D Prescription Drug Plan
  • Ensure their doctors, pharmacies, and prescriptions are still covered for 2026

Cooking with Candace—Healthy Fall Recipe: Roasted Veggie & Quinoa Salad with Maple Dijon Dressing

A cozy and colorful way to get your veggies in this fall — hearty enough for lunch, light enough for dinner.

🛒 Ingredients:

  • 1 cup cooked quinoa
  • 1 zucchini, sliced
  • 1 sweet potato, cubed
  • ½ red onion, chopped
  • 1 cup Brussels sprouts, halved
  • 2 tbsp olive oil
  • Salt & pepper to taste
  • 2 tbsp pure maple syrup
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar

  1. Preheat oven to 400°F.
  2. Toss zucchini, sweet potato, onion, and Brussels sprouts in olive oil, salt, and pepper. Roast for 25 minutes.
